Sustainability
Whatever you choose to eat, you can trust that its journey to and away from you has been carefully considered. From how we source our food, to how it’s served, we’ve taken care to ensure every step of the journey leaves the lightest possible footprint.
Packaging
Last year, after months of working with our suppliers, we patted ourselves on the back since our packaging was finally 100% compostable. A few months later, after getting much more granular into sustainability, we found out that compostable is not always the most environmentally friendly solution.
Since then, we have tried to make more educated decisions, based on the reality of our locations and products.
Compostable packaging does not compost in nature, it has to be composted at industrial plants at high temperatures. Unfortunately the chance of compostable packaging ending up in these industrial plants is not very high right now in London, whereas recyclable plastic waste is much more likely to end up in a recycling plant. We have therefore switched to recycled and recyclable plastic for our bottles, bowl lids and snack pots. Cutlery is never recycled since it is too small to sort, so we have kept the cutlery compostable since we feel it is the lesser of two evils in this case. But in the case of cutlery, using your own reusable cutlery is by far the best alternative!
In any case, we aren’t adding any new plastic to the planet, and none of our waste goes to landfill. We have also recently introduced our sustainaBOWL, which is of course the most environmental option.
Fit Out
Over 90% of the materials used in the fit out of Great New Street are sustainable. Our ceiling is made of recycled and glue-free timber, which was assembled by hand at a workshop in London, and the corten floors are up-cycled. All of our lights use LED bulbs, which are the most energy efficient option.
Sourcing
Sourcing locally from certified farms is always the most environmental option, so look to our seasonal menu for the lowest carbon choices.
We do not offer beef or lamb on our menu, and currently also avoid shrimp, salmon and tuna due to the difficulty of truly sourcing them sustainably.
Cleaning
We have partnered with InnuScience, who produce biotechnological cleaning products. This allows us to use bio certified products for over 95% of our cleaning and disinfecting needs.
